This quick and easy cheese toasties recipe is the perfect comfort food. Whether you’re looking for an easy lunch, simple appetiser or speedy weeknight dinner, this dish won’t disappoint. Homemade creamy cashew cheese, tangy veggies and so much texture. 

Vegan Cashew Cheese Toasties

Which bread can I use for these vegan cashew cheese toasties?

These vegan cashew cheese toasties are incredibly simple to prepare. We used multigrain sandwich bread slices, about 1cm thick, but you can absolutely use your favourite. Use gluten-free bread to make this dish gluten-free, try sourdough bread or mix it up with a baguette.


Total cooking time: 25 minutes | Makes: 8 | Easy

  • 8 sandwich slices
  • 1 small courgette, finely chopped
  • 100g mushrooms, finely chopped
  • 1 spring onion, finely chopped
  • 150g sweetcorn
  • 1 tbsp olive oil
  • 1 tbsp oregano
  • Salt and pepper to taste

For the cashew cheese:

  • 150g cashews, soaked overnight
  • ½ tsp garlic powder
  • 50ml vegetable stock
  • 1 tbsp nutritional yeast
  • 1 tbsp lemon juice 
  • Salt and pepper to taste


1. Preheat your oven to 190°C. 

2. Start by heating olive oil in a pan over medium heat. Add in spring onions and sauté for 1-2 minutes. Add the courgette, mushrooms and sweetcorn, season with oregano, salt and pepper and cook for about 5 minutes, stirring occasionally. 

3. Once the veggies have cooked for 5 minutes, drain off any excess liquid and set aside. 

4. In the meantime, make your cashew cheese. Simply combine all ingredients in a blender (you can also use a hand blender) and blend until smooth and creamy. Make sure the cashews are drained before you add them. Set aside.

5. Place the sandwiches on a baking tray, brush with vegetable spread (or Flora plant) and toast in the oven for 1-2 minutes.

6. Combine cashew cheese and veggies, add more salt and pepper if needed. Spread over the pre-toasted sandwiches and bake in the oven for 10-15 minutes.
