This vegan French toast recipe is so devilishly simple and incredibly tasty – the perfect weekend treat! Since we’re spending so much time at home recently we love mixing up our breakfast routine, which usually consists of a quick porridge or breakfast cereal. This recipe is zero-fuss and only requires 15 minutes from start to finish.
What to serve with vegan French toast
We love serving these French toasts with banana, blueberries and a good drizzle of maple syrup. But you could also mixit up with some mango, strawberries or caramelised pears.
- 140 ml soya milk
- 4 slices wholemeal bread
- 1 tbsp cornstarch
- 1 teaspoon flax seeds
- 1/2 tsp baking powder
- 1 tsp cinnamon
- 1 tbsp peanut butter
- 2 tbsp vegan butter
- 1 banana, sliced
- Handful blueberries
- 1 tbsp maple syrup
- Whisk together the soya milk, cornstarch, flax seeds, baking powder, cinnamon and peanut butter in a shallow bowl.
- Heat the vegan butter in a pan over medium heat and melt.
- Dip each side of the bread in the batter and let soak for about 3-4 seconds, then add the bread to the pan and fry for 2-3 minutes on each side, until golden brown.
- Serve with banana, blueberries and maple syrup.
