Vegan French Toast

This vegan French toast recipe is so devilishly simple and incredibly tasty – the perfect weekend treat! Since we’re spending so much time at home recently we love mixing up our breakfast routine, which usually consists of a quick porridge or breakfast cereal. This recipe is zero-fuss and only requires 15 minutes from start to finish.

What to serve with vegan French toast

We love serving these French toasts with banana, blueberries and a good drizzle of maple syrup. But you could also mixit up with some mango, strawberries or caramelised pears.

Ingredients:

  • 140 ml soya milk
  • 4 slices wholemeal bread
  • 1 tbsp cornstarch
  • 1 teaspoon flax seeds
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1 tbsp peanut butter
  • 2 tbsp vegan butter

To serve:

  • 1 banana, sliced
  • Handful blueberries
  • 1 tbsp maple syrup

Method:

  1. Whisk together the soya milk, cornstarch, flax seeds, baking powder, cinnamon and peanut butter in a shallow bowl.
  2. Heat the vegan butter in a pan over medium heat and melt.
  3. Dip each side of the bread in the batter and let soak for about 3-4 seconds, then add the bread to the pan and fry for 2-3 minutes on each side, until golden brown.
  4. Serve with banana, blueberries and maple syrup.
