What exactly is tofu?
Tofu is a plant based food made of condensed soy milk that is pressed into solid white blocks. Like most soya products, it has its origin in China, where it has been consumed for over 2,000 years.
Its texture, neutral taste and protein content make it a popular meat replacement. For this recipe, tofu provides a great vegan alternative to scrambled eggs.
Tofu’s health benefits

Tofu is a versatile ingredient with many health benefits. It’s a lovely source of protein and contains several anti-inflammatory, antioxidant phyto-chemicals making it a great addition to an anti-inflammatory diet. Tofu is also a valuable plant source of iron and calcium– in addition to fibre, potassium, magnesium, copper and manganese.

Tips for making this tofu scramble recipe:
The best (and probably most unusual) way to achieve perfect bite-sized crumbles is by using a potato masher! You might think this is weird, but let us tell you it’s worth giving it a go! It will save you some time and create much better crumbles.
Mix it up with different spices! Turmeric is a must for this tofu scramble. Not only is turmeric incredibly healthy but it also gives the scramble its egg-like colour. However, if you’re not a huge fan, try replacing ½ tsp turmeric with smoked paprika powder.
Add a splash of soya or almond milk for a creamier texture.
Tofu scramble variations:
We usually keep things simple, and serve our tofu scramble on top of a slice of toasted sourdough and simply top it with a few grinds of black pepper, a little extra salt, and freshly chopped chives or cress.

To mix things up, you can also add extra ingredients to the tofu scramble itself! We love adding fresh dill and spring onions to create a deliciously fresh, warm, citrus-like taste.
For a ‘cheesy’ tofu scramble, add 2-4 tbsp vegan mozzarella or vegan feta to the tofu scramble just as it finishes cooking.

Ingredients for the tofu scramble:
Total cooking time: 10 minutes | Serves: 2 | Easy
- 1 tofu, pressed and chopped into 1cm chunks
- 1 tsp olive oil
- 2 tsp turmeric powder
- 1 tsp garlic powder
- Salt and pepper to taste
Method:
1. Heat olive oil in a frying pan over medium heat. Add tofu and all the remaining ingredients. Stir and cook over medium heat for 3-4 minutes.

2. Once you gave everything a good stir, use a fork (or potato masher if you have one) to crumble it into bite-sized pieces. Season with more salt and pepper if needed.

3. Serve on toasted sourdough or freshly baked bagel.
